1 Tbsp avocado or grapeseed oil
1 yellow bell pepper
2 large button mushrooms
Small handful of spinach
Salt/pepper to taste
1-2 Tbsp Barefood'n Happy Cheezy POWder sprinkle
1 cooked sweet potato
In a small skillet, saute onion, tomato, pepper and mushroom until soft. Add spinach and salt and pepper to taste. Stir in 1-2 Tbsp Cheezy POWder Sprinkle. On a plate, arrange sweet potato cut in half, top with saute mixture and more Cheezy POWder sprinkle.
This is even better the second day (if it lasts that long), so make a double batch!
