This is one of the most delicious kale salads we have ever tasted! Kale doesn't have to be hard to eat when you do it right!
1 bunch kale
1 large tomato, chopped (or sun dried tomatoes, reconstituted)
1 stalk celery
2 Tbsp olive oil
2 tsp lemon juice
1 Tbsp Barefood'n Happy Cheezy POWder Seasoning
1/2 cup pine nuts
1/2 cup Dulse
Your favorite chopped veggies
(NOTE: It's very important to follow the order in which you add the ingredients as it is crucial to the recipe)
Remove main part of kale stem and finely chop leaves into a bowl. Add salt and massage well until kale wilts. Add lemon and massage again. Add the chopped tomato.
In a food processor, blend avocado, olive oil and celery to cream and pour over the kale. Mix well to completely coat the kale leaves.
In the food processor, add the carrot and process until chopped fine. Add to the salad as well as the POWder seasoning and pine nuts. Mix well and serve.
