These are sooo addicting, you might not want to share!
8-10 gold potatoes, washed (leave peel on)
3 tsp oil or melted butter
3 Tbsp Barefood'n Happy cheezy POWder
Preheat oven to 350 F. Using 1 tsp of the butter, spread it into the bottoms of a muffin tin.
Using a mandolin, cut potatoes into 1/16" thin slices. When finished, place in a large mixing bowl. Add the remaining oil and toss the potatoes in it. Add the POWder and toss again so that all the potatoes are coated evenly.
Layer the potatoes into stacks and place them into each individual muffin cup in the muffin tin. Sprinkle the tops with salt and pepper.
Bake 55-60 minutes or until the edges are golden brown and the center is tender.
