This cheesy broccoli casserole is just pure comfort food. Your family will definitely be asking for seconds!
1 pound ground turkey
3 cups cooked rice
1 large head organic broccoli, chopped into small pieces
1 small yellow onion, chopped
1/2 container (10 oz.) Barefood'n Happy's Incredibly Delicious Cheddar Cashew Cheeze
3 Tablespoons soy-free Veganaise or mayonnaise of your choice
3/4 cup chicken broth or water
1/2 teaspoon sea salt and pepper to taste
2 Tablespoons olive oil
2 Tablespoons almond flour
Cook rice according to directions on package. Set aside. In a large skillet, brown turkey with the onion in olive oil. Add rice along with the rest of the ingredients and combine thoroughly. Place in a casserole dish and sprinkle with almond flour. Bake in preheaed 375 degree for 30 minutes. Enjoy!
*For a Vegan version, simply leave out the ground turkey or sub in a meatless "turkey" alternative. Easy Peasy!
