This is DELICIOUS! (gluten-free, dairy-free)
1/2 cup Barefood'n Happy Cashew Cheddar Cheeze spread
9 ounces uncooked gluten-free pasta
1 teaspoon avocado oil
1 small onion, diced
2 cloves garlic, minced
1 1/2 cups diced fresh tomatoes
3 handfuls spinach (roughly chopped)
1 cup fresh basil (or 1 1/2 Tbsp dried)
2-3 teaspoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1) Bring a large pot of water to a boil and cook pasta according to directions until al dente.
2) In a large skillet, heat oil over medium heat. Add onion and garlic and sauté until translucent (about 5-10 minutes). Add diced tomatoes and spinach and cook until spinaach wilts.
3) Stir in Barefood'n Happy Cashew Cheddar Cheeze spread, basil, tomato paste, oregano, salt and pepper and cook for 5 minutes or until heated through.
4) Drain pasta and add to the skillet with the cheeze, tomatoes and spices. Cook a few minutes or until heated through. Enjoy immediately.
